Baked asparagus fries

Need a french fry fix? Hold up (and hold the fast food potatoes) and go healthy with this crazy-tasty recipe by foodie author Chungah Rhee, featuring the soon-to-be in season delight that is asparagus.

How to make Baked asparagus fries

Ingredients

1 cup panko bread crumbs

1/2 cup grated Parmesan cheese

Kosher salt and freshly ground black pepper, to taste

1 pound asparagus, trimmed

1/2 cup all-purpose flour

2 large eggs, beaten

Directions

Preheat oven to 425 degrees. Lightly oil a baking sheet or coat with nonstick spray.

Combine panko and Parmesan in a large bowl; season with salt and pepper, to taste. Set aside.

Dredge asparagus in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.

Place asparagus in a single layer onto the prepared baking sheet. 

Bake for 10-12 minutes, or until golden brown and crisp.

Serve immediately.
