5 Easy Dinners for Stress-free Evenings

Hello Minnesota Parents! I am Lisa Arnason, the founder of 2hungrydaughters. I have 2 little girls, as you guessed, who love to eat, and I decided to share my passion for cooking and parenting with the world. I grew up in a small town in Northern Minnesota with a dad who farmed and a mom who made every meal homemade. Let me tell you, everything she makes is delicious. We all know how busy and quick the time flies from 4pm-9pm. Especially when you throw in after school activities. No one has hours to prep and make a homemade meal. Time is valuable in the evening, and you want some a meal that is healthy, easy, affordable, and, of course, delicious.

Just as my mom did, I genuinely love making a wonderful homemade meal and when my kids gobble it up, my heart explodes. You can only make so much mac and cheese, peanut butter and jelly sandwiches, and chicken nuggets. Let’s look past those meals and try something new.

The first one I am here to introduce you to is a family favorite. No need for pizza delivery here when you have Pizza Hot Dish. This easy, cheesy Pizza Hot Dish is a quick and hearty weeknight dinner sure to please the whole family.

Another simple and delicious favorite meal of ours is sheet pan sausage, green beans, and potatoes. The best thing about sheet pan meals is they are so unbelievably easy. They are a quick meal perfect for a busy evening jam-packed with sports.

 


3. Chicken Pot Pie Casserole–>Get Recipe Here

Next up, a family staple. Chicken pot pie casserole.  First off, I have yet to master the art of making a pie crust. So, when I made this recipe, I decided to make it easy and change it up a bit from a regular chicken pot pie. I give you a chicken pot pie casserole with biscuits on top. Talk about delicious. There is nothing I love more than a home-cooked meal and this just screams comfort food. This recipe is great for busy evenings and even better as leftovers.

Chicken is a top request in our house. We are good whenever I can throw it in with a few other items and make a meal. Our Chicken and Rice Bake is a one-pan meal that requires minimal dishes, which makes for easy cleanup, the perfect combination of convenience and comfort food.

Last but not least, we have a good one. Good ole, sloppy joe’s. Growing up, my mom called them BBQ’s but now they are called sloppy joe’s in this house. Sloppy Joe’s are easy, tasty, and kid approved. This recipe comes together in 20 minutes, an easy weeknight meal you can serve with confidence. Yes, you can whip up sloppy joes with canned sauce in a flash, but once you make this recipe, you will never go back. It is so much better than any premade can or what the local lunch lady serves.
