This Easy Slow Cooker Baked Ziti Soup Is My Family’s New Favorite Dinner
You can also make this baked ziti soup recipe on your stovetop. The slow cooker helps the flavors meld, but in a pinch, it can be a stove recipe! Cook the pasta noodles to al dente, then drain and add the remaining ingredients. Simmer until pasta is fully cooked.
Baked Ziti Soup Ingredients:
- 4 cups vegetable broth
- 1 (28 oz) can crushed tomatoes
- 1 tbsp brown sugar
- 2 tsp red wine vinegar
- 2 tsp Italian seasoning
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 onion (yellow) diced
- 1 clove garlic (minced)
- 2 cups ziti noodles
- 1/4 cup basil leaves roughly chopped
- 1 cup mozzarella cheese (shredded)
- 4 tbsp parsley (optional) roughly chopped
Instructions:
Stir 4 cups vegetable broth, 1 (28 oz) can crushed tomatoes, 1 tbsp brown sugar, 2 tsp red wine vinegar, 2 tsp Italian seasoning, 1⁄4 tsp salt and 1⁄4 tsp ground black pepper together in slow cooker.
2. Stir in 1 diced onion and 1 clove garlic (minced).
3. Cover and cook on low heat for 4-6 hours.
4. In the last half hour of cooking, stir in 2 cups ziti noodles and cover again. After 30 minutes, stir in 1⁄4 cup finely chopped fresh basil and break up any pasta that has stuck together.
5. Divide between bowls and top shredded mozzarella.
