Creamy Tomato Soup Recipe

Make the best creamy tomato soup with this easy, comforting recipe. Rich flavor, simple ingredients, and perfect for cozy family dinners. This recipe can easily be made dairy-free if needed. Simply replace the heavy cream with a can of full-fat coconut milk and the butter with vegan butter or ghee.

Tomato Soup Recipe Ingredients:

2 tbsp butter
1/2 onion (yellow) diced into small pieces
1 1/2 tsp salt
1/2 tsp ground black pepper more if desired
1 tbsp dried oregano
1/2 tsp dried basil
3 cloves garlic (minced)
1 (28 oz) can crushed tomatoes
1 (15 oz) can fire roasted tomatoes (diced)
4 cups chicken broth
1/2-1 cup heavy cream
1/4 tsp red pepper flakes (optional)
1/2 cup basil (optional) optional garnish

Tomato Soup Recipe Instructions:

1. Heat a large soup pot over medium high heat. Add 2 tbsp butter. Once the butter has melted, add 1/2 chopped yellow onion.

2. Season with 1 1/2 teaspoons salt, 1/2 tsp ground black pepper, 1/4 tsp red pepper flakes (optional for spice), 1 tbsp dried oregano, and 1/2 tsp dried basil.

3. Saute until the onions are lightly browned, 5-8 minutes.

4. Add 3 cloves of minced garlic (about a tablespoon) and saute for 1 more minute.

5. Add both cans of tomatoes along with the juices to the pot. Add 4 cups chicken broth. Stir.

6. Turn the heat up to high and bring the mixture to a boil. Once it boils, turn the heat down to a low simmer and cook for at least 10 minutes, 25 minutes if you have the time.

7. Turn off the heat and use an immersion blender to puree the soup. If you do not have an immersion blender, let the soup cool for a couple minutes before transferring to a blender. You will puree it in a few batches. Do not fill the blender to the fill line; add less. The soup is very hot and will expand when blended, which could overflow your blender.

8. Once all the soup is blended, heat it back up again on the stove if necessary. Turn off the heat and slowly stir in 1/2 to 1 cup cream 9. Top with 1/2 cup basil if desired. We recommend serving with grilled cheese sandwiches!
