Our friends at Legacy Family Center are excited to share authentic recipes with us! The first recipe is a delicious Shrimp & Salmon dish with chickpeas. It is a great recipe to start teaching children about cleaning produce, different ingredients in meals, and how beautifully it all comes together in the end for a wonderful family meal!
Shrimp and Salmon with Chickpeas Recipe-
Ingredients:
1 cup of cooked or canned chickpeas
2 green onions
½ white onion
1 lb Shrimp
1 filet Salmon
1/2 tsp Fennel seeds
1/2 tsp Cumin powder
1 Garlic clove
2 T Olive oil
3 eggs
1 tsp Heavy cream or 2 tsp of water
1 Cup Red or Orange Bell peppers
2 T Chicken Stock (optional)
Salt and black pepper
Directions:
- Put the cooked chickpeas in a bowl and add a pinch of salt and black pepper. Set aside.
- Put the shrimp in a bowl and add salt, black pepper, and cumin. Mix well.
- Rinse and pat the salmon dry and place it in a bowl. Add salt, cumin, fennel seeds, and black pepper. Mix well and set aside.
- Mix the eggs in a bowl with heavy cream or 2 tsp of water.
- Cut the onion, bell peppers, green onions, and garlic. Put in a bowl.
- Place a pot or frying pan on the stove, wait until it is hot, then turn the stove down a bit before adding some oil.
- Add the shrimp with salt, cumin, and pepper to the frying pan for five minutes or until pink. Set aside.
- Add more oil to the frying pan and add the salmon. Sear the salmon on both sides for four minutes each (depending on the thickness of the salmon). Put the salmon in the shrimp bowl and mix. Set aside.
- Add the chickpeas to the frying pan. Don’t add oil. Add chicken stock or a little bit of water to lift all the seasoning from the frying pan. Put the chickpeas in the frying pan and mix well. Stir the chickpeas until the juice dries, then add a little oil just to brown the chickpeas for three minutes. Put the chickpeas in the shrimp bowl and mix.
- Add the white onion to the frying pan. Cook for two minutes. Add the green onions, bell peppers, and garlic and cook for two minutes.
- Turn off the stove. Put the contents of the shrimp bowl in the frying pan. Mix everything. Season to taste.
- In another frying pan, add a little bit of oil to coat the pan. Let the pan get hot before adding the eggs. Scrambled or omelet, you decide.
- Put the eggs on a plate and add the shrimp, salmon, and chickpeas mixture.
It tastes great with rice or as a snack.
