For One-Pot Meals:

  • Mind Your Liquid Ratio: When cooking pasta, rice, or grains, ensure you have enough liquid for absorption without making the dish soupy.

Easy One-Pot Recipes

One-Pot Chicken & Rice

Ingredients:

  • 4 tbsp butter
  • 1 1/2 cups baby carrots chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp paprika
  • 2 cups white rice (long grain)
  • 1/2 onion (red) diced
  • 1 1/2 tsp garlic (minced)
  • 2 tbsp dried parsley
  • 8 cups chicken broth
  • 1/2 lb chicken breast (boneless, skinless) cut into bite size pieces
  • Salt and pepper to taste 

Instructions: 

  1. Melt 2 tbsp butter in a large pot over medium heat.
  2. Add chopped carrots, minced garlic and season with garlic powder, onion powder and paprika.
  3. Cover and cook until carrots are tender (5-6 minutes) stirring occasionally.
  4. Add rice and diced onion to the pot and stir to coat in butter. Saute for 1 minute. Add dried parsley and chicken broth. 
  5. Turn heat to high and bring to a boil, stirring occasionally to ensure rice doesn’t stick to the bottom of the pot. 
  6. Turn heat to medium-low and simmer for 10 minutes (more or less depending on how fast your rice cooks), stirring occasionally.
  7. Add diced chicken to the pot, turn heat up slightly to bring back up to a light boil, then reduce heat to medium-low and continue to simmer until chicken is cooked through and rice is al dente (approximately 12-15 more minutes, stirring occasionally)
  8. Stir in remaining 2 Tablespoons butter and season with additional salt and pepper if desired.

Note: This dish will thicken as it cools.


Sheet Pan Nachos 

Serves 4-6

Ingredients:

  • 8 oz sturdy corn tortilla chips
  • 1 can black beans (drained and rinsed)
  • 11/2  tsp taco seasoning
  • 2 cups shredded cheese of choice 
  • 1 diced red onion
  • 1 cup corn kernels (fresh or thawed from frozen)
  • 2 cups pico de gallo
  • 1 avocado 
  • 1 lime (for juice)
  • ½ cup cilantro 
  • 1 cup sour cream or plain Greek yogurt 
  • 2 jalapeño peppers (chopped and seeds removed)

Instructions:

  1. Preheat the oven to 400 degrees and line a quarter sheet pan or small baking dish with parchment paper.
  2. Spread the chips out in an even layer. It’s ok if they overlap a little bit but if you’re making a bigger batch, use a larger sheet pan or layer the ingredients.
  3. Mix taco seasoning into rinsed and drained black beans. Spoon them over the chips, distributing evenly. 
  4. Sprinkle about ¾ of the shredded cheese over the chips and beans.
  5. Sprinkle the corn kernels, jalapeño peppers and onion over the top of the cheese and add the remaining cheese on top.
  6. Bake in the oven for 10-12 minutes until the cheese melts. It should be bubbly and a little bit golden brown in spots.
  7. Garnish with cilantro, pico de gallo, avocado and sour cream. 

One-Pot Vegetarian Chili

A hearty, protein-packed plant-based meal.

Servings: 4

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 avocado, sliced (optional for topping)
  • Fresh cilantro (optional garnish)

Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and bell pepper until softened.
  2. Add beans, diced tomatoes, broth, and spices. Stir well and bring to a boil.
  3. Reduce heat and simmer for 25 minutes.
  4. Stir in frozen corn and cook for 5 more minutes.
  5. Serve hot, topped with avocado slices and cilantro.

One Pan recipe Andouille Sausage Skillet 

One Pan Andouille Sausage Skillet 

Servings: 4-6

Ingredients:

  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 onion (yellow) diced
  • 1 (12.8-ounce) package smoked andouille sausage (thinly sliced)
  • 2 cups chicken broth
  • 1 (14.5 oz) can petite diced tomatoes (drained)
  • 1/2 cup milk
  • 8 oz elbow macaroni
  • 1 cup pepper jack cheese (shredded) or sub Monterey Jack for less spice 
  • Salt & pepper to taste 

Instructions:

  • Heat olive oil in a large skillet over medium high heat. Add minced garlic, diced yellow onion and sliced sausage.
  • Cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes.
  • Stir in chicken broth, diced tomatoes (drained), milk and macaroni pasta noodles. Season with salt and pepper, to taste.
  • Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.
  • Remove from heat and top with pepper jack cheese. Cover until cheese has melted, about 2 minutes.

Sheet Pan Roasted Tomato & Gnocchi  One pan recipe

Sheet Pan Roasted Tomato & Gnocchi 

Serves 4-6

Ingredients:

  • 1 lb fresh gnocchi
  • 2 pints mixed cherry tomatoes
  • 1 shallot, chopped
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • 2 tbsp olive oil 
  • 2 garlic cloves, crushed
  • Parchment paper 

To serve:

  • fresh basil, sliced
  • sea salt & ground black pepper 
  • Shaved parmesan cheese

Instructions:

  1. Preheat the oven to 450 degrees and line a baking sheet with parchment paper. 
  2. Mix together olive oil, salt, onion powder, garlic powder, Italian seasoning and garlic. Spread gnocchi, tomatoes and chopped shallot out on the baking sheet then pour on olive oil spice mixture and use your hands to incorporate. Bake for 25 minutes. 
  3. Remove the sheet pan from the oven and pour the roasted gnocchi onto a serving dish. Top with a drizzle of olive oil, fresh basil, shaved parmesan cheese, sea salt and cracked black pepper.
