Shepherd’s Pie-It’s an Irish Classic

This warm-hearty dish aims to please the entire family. With its meat and veggie filling and mashed potatoes on top, who wouldn’t be wanting this every night for dinner? Be sure to remember this recipe because your kids will ask for it again and again!

Make 8 servings.

Ingredients-

1 egg
1 T olive oil
1/2 white onion, diced
2 lb ground beef
2 T tomato paste
1 T Worcestershire sauce
1/2 cup all-purpose flour
1/2 cup beef broth
1 t salt
4 cups mashed potatoes, cooled (we use Hungry Jack) in a large bowl
10 oz bag frozen peas and carrots mix

Directions-

Preheat oven to 400 F.
Beat the egg into the mashed potatoes until light and fluffy in the large bowl.
Heat large pan to medium-high.
Add oil and diced onions.
Sauté and stir until onion is cooked.
Add the ground beef and continue cooking until the meat is browned. Drain oil drippings and rinse, if desired.
With the meat in the pan, sprinkle in flour and stir until evenly coated.
Add tomato paste, broth, Worcestershire sauce, salt, and vegetable mixture.
Cook and stir until the sauce thickens—around 10 minutes.
Evenly spread mixture to baking pan (11×13) and top meat mixture with mashed potatoes.
Bake for 25 minutes or until the mashed potatoes have set and are turning brown on top.
