Any time my sister, Kayla, prepares breakfast for us she always makes an oatmeal bake! It is the perfect combo of oats, strawberries, bananas and a touch of butterscotch!
If you are looking for a simple breakfast to make for friends and family. This is it!
Ingredients:
2 cups old fashioned rolled oats
1 teaspoon baking powder
1/3 cup light brown sugar
1 teaspoon cinnamon
1/2 teaspoon salt
6 ounces strawberries, sliced
1/3 cup butterscotch chips
2 cups milk, any type
1 large egg
3 tablespoons butter, melted
2 teaspoons vanilla extract
1 banana, peeled and cut into 1/2-inch slices
Directions:
PREPARE
Heat oven to 375 degrees F. Spray 2-quart baking dish with cooking spray and place on baking sheet. In a large bowl, mix together oats, baking powder, sugar, Cinnamon, salt, half the strawberries, and half the butterscotch chips. Add to baking dish.
Scatter the remaining strawberries, butterscotch chips, and the banana on top of the oats. In large bowl, whisk together milk, egg, butter, and vanilla extract, and pour over the oats mixture. Gently shake the baking dish to help the milk mixture go throughout the oats.
BAKE
Bake oatmeal until the top is golden brown and the milk mixture has set, about 35 minutes. For an extra tasty top, sprinkle a tablespoon or so of brown sugar on top of the oatmeal, and then place back in the oven under the broiler and broil for 20-30 seconds.
STORE
Store in an airtight container in refrigerator for up to 5 days. Reheat in the microwave or oven.
