Your Favorite Yogurt Pancakes
Makes about 5-7 pancakes | Time: 30 minutes to make and cook, start to finish
Ingredients:
1 cup unbleached white flour
1/2 tsp salt
1 tsp baking powder
1 Tbsp butter for the batter (plus a little more for the pan)
1 cup flavored yogurt (your choice)
1/2 cup milk

Butter
Real Maple Syrup
Berries
Sliced bananas
Extra yogurt
Powdered sugar
Directions:
Put the strainer over a medium-sized bowl. Add the following into the strainer: 1 cup flour, 1/2 tsp salt, and 1 tsp baking powder.
Gently shake the strainer up and down until everything sifts into the bowl.
With a spoon make a dent in the center of the flour mixture. Put this aside. Cut 1 Tbsp butter.
Put the butter in a small bowl and heat in the microwave on high for 30 seconds until it is melted. Spoon the yogurt into a 2 cup measuring cup until it reached the line for 1 cup.
Pour 1/2 cup milk into the measuring cup until together the milk and yogurt reach the line for 1 1/2 cups.
Break an egg into a small bowl.
Add the egg and melted butter, to the yogurt and milk. Whisk until the egg disappears into the mixture. Pour the wet mixture into the dent on the dry mixture. Mix with a spoon until you don’t see any more flour. Put a frying pan or griddle on medium heat. Grease pan with butter.
Scoop 1/3 cup of the batter onto the pan or griddle to make as many round pancakes that will fit. Cook for 5 to 8 minutes on one side until golden brown underneath. (use a spatula to check). Flip the pancakes and cook on the other side until golden brown underneath. Serve hot; plain, or with syrup, fruit, extra yogurt, or powdered sugar on top. Enjoy!
